Description
There are so many vibrant colors in this salsa that it practically demands a celebration of it's own. This salsa also goes to show that snacks can be both light and flavorful. Make a hearty bowl of this salsa and have it for an entire week to snack on. You'll begin to realize that you don't always need heavy, dense foods to satisfy your hunger bug. It only takes a few minutes to whip together and is best enjoyed with veggies sticks or dehydrated crackers.
Ingredients
| 4 | tomatoes (large in size) | |
| 1 | sweet onion (large in size) | |
| 1 | orange bell pepper (large in size, chopped) | |
| 1 | yellow bell pepper (large in size, chopped) | |
| 2 | c | cilantro |
| 1⁄2 | t | black pepper |
| 2 | T | lemon juice |
| 1⁄2 | t | Celtic or Himalayan salt |
| 1 | t | cayenne pepper (or to taste) |
Instructions
- Toss the tomatoes, onion and cilantro in a food processor. Process until desired consistancy.
- Pour mixture into a large mixing bowl and stir in the remaining ingredients. Adjust the seasonings to your taste.
