Chai Tea
Description
Also known as Yogi tea, the hot, soothing Indian mixture of water, milk, spices, and sugar has become a popular drink in the West, with good reason.
Ingredients

| 8 | Unknown | cardamom pods (crushed) |
| 4 | Unknown | cloves (whole) |
| 2 | Unknown | star anise pods (whole) |
| 2 | Unknown | cinnamon sticks |
| 1 | T | fresh ginger (grated) |
| 1 | T | fennel seeds (whole) |
| 1 | c | organic milk (substitute almond milk, coconut milk, rice milk, or soy milk for dairy-free) |
| oz | raw sugar or agave (to taste) |
Instructions
- In a large saucepan, bring the water to a boil over high heat.
- Using a mortar and pestle or the back side of a spoon, firmly press each cardomom pod until it cracks open, leaving the seeds inside.
- Add the cardomom pods, cloves, star anise, cinnamon, ginger, and fennel. Reduce the heat and simmer for 10 minutes.
- Stir in the milk. Add the sugar to taste. Continue to simmer until the sugar has dissolved, 2 to 3 more minutes.
- Pour the chai through a strainer into cups or mugs.
Notes
Pitta: Not recommended due to the heating spices
