Description

No food symbolizes love better than chocolate...with raspberries. Raw chocolate is made using cacao. Raw cacao (kuh-cow) is the real, whole-food source of chocolate. It's one of the worlds superfoods, too. When people talk about chocolate being good for you, this is the kind they mean. It's bursting with vitamins, minerals, antioxidants, and "happy brain" chemicals. In some countries it's known as the "Food of the Gods". Cacao has been used to treat ailments, as a aphrodisiac and as an anti-depressant. It's a complex and magical food that you can enjoy at home.

Ingredients

1ccacao butter
1⁄2ccacao nibs (finely ground in coffee grinder)
8 1⁄2ozcacao powder (weight)
3⁄4calmond butter
1cdried raspberries (broken into small pieces)
1⁄2tsalt
1ccoconut syrup (this is also called coconut sap and coconut nectar)
3 vanilla beans (scraped insides only)

Instructions

  1. Melt the cacao butter in a double boiler and then pour into a blender.
  2. Slice the vanilla beans in half lengthwise. With a spoon, thoroughly scrape the insides of the beans and add to blender.
  3. Blend until vanilla is totally broken down and mixture feels warm.
  4. Pour into a large mixing bowl and stir in the salt, coconut syrup, and almond butter by hand.
  5. Grind the cacao nibs in a coffee grinder until finely ground. Add to the large mixing bowl along with the cacao powder.
  6. Break up the dried raspberries into small bits and fold into the mixture.
  7. Stir by hand until smooth and there are no pockets of cacao powder.
  8. Line a baking shet or pan with heavy waxed paper (8x8x2 inch is ideal)
  9. Transfer mixture to the baking sheet or pan and use a spatula to get a smooth top.
  10. Set in the fridge or freezer until fudge becomes hard. This will take about 20 minutes.
  11. Remove from the fridge or freezer and cut into the size and shapes you choose.
