Description

This soup is easy on the digestive system, but also very cleansing. This meal is excellent for those trying to maintain their health through the course of all the holiday parties and buzz.

Ingredients

2tghee (substitue with olive oil to make the dish vegan)
2 leeks (chopped)
1tblack pepper
1tbraggs liquid amino acid (substitute tamari sauce if you like)
1⁄4lbwhite potatoes (peeled and cubed)
1Ttarragon
1tthyme
3⁄4lbasparagus (discard bottom inch and cut into 1 inch pieces)
6cVegetable Stock
1⁄2tnutmeg

Instructions

  1. In large pot, heat the ghee.
  2. Sauté the leeks and add pepper and braggs.
  3. Add the potatoes, tarragon and thyme. Sauté until the potatoes are browned.
  4. Add the asparagus pieces and cover with the vegetable stock. Simmer until potatoes are tender.
  5. Purée the soup in a blender.
  6. Garnish with nutmeg.
